“We’ve worked hard to remove the intimidation factor from ordering great wines that will perfectly compliment the food.” Tasting with distributors involves sampling foods from the menu and finding the right balance between excellence and affordability. Most wines come in at under $50 per bottle. “We also have a carafes and glass pours of some really exceptional Washington wines that are served directly from the keg.”
The wine list is under development with the assistance of Shayn Bjornholm, Examination Director for the Court of Master Sommeliers, Americas. Before taking on this new role with the Court of Master Sommeliers, Shayn served for five years as Director of Education for The Washington Wine Commission, and his knowledge of Washington wines is unparalleled.
“Shayn and I worked together when I was executive chef at Canlis restaurant and he was the sommelier,” says Atkinson. “He and I worked out pairings every month for the Chef’s Tasting Menu there; I understand his palate and he has been my personal tasting coach and wine guru for morethan a decade. I am thrilled and honored to be working with him.”
